Just an update on Emilys two week long birthday celebration...LOL. The bash commences tomorrow night at 7 and the weather forecast is......beautiful....all day in the mid 80s and clear....if there is no wind...then it will be perfect. We found tiki torches....so cheap at Hobby Lobby that we plan to just light them...then throw them away....got the cake ordered at SAMs....from my conversation and the price (14.95...half sheet cake...feeds 48) it cant be the best...but when we get through decorating it ourselves ...it will be...LOL The final menu decision is Taco Salads....our gourmet groc store does Taco bowls for .50 each so this is really affordable. The we will just have bowls and bowls of hamburger...lettuce...cheese...etc to pile on. Emily also wants to make her famous chile con queso...which she makes with velveeta...white mexican cheese...Rotel...and cooked and crumbled sausage. (she also likes to make one with melted cream cheese and salsa) We have printed off the recipes everyone posted here and might still use some of them. I think I will also get a couple of boxes of taquitos at SAMs just in case more parents than usual "forget" to go home...LOL. Our back yard is huge...it looks lovely right now...the rock garden is lush...and on a pretty night after stopping for a moment to chat...lots of them have trouble leaving even tho they want their kids to have an evening to themselves...but...its different now that every one here is really an adult...so we might end up with a party of about 50 before its all over. We lucked into some extra decorations...Hobby Lobby has their Cinco de Mayo stuff at deep discounts.....I would still do a pinata...but dont have any good place to hang it...my trees are not big enough yet....and everyone I have ever bought you have had to hack to death.....but who knows...at the last minute I might get one to just create some ambience. As I have posted on the HEALTH site...a good friend of all these young people had open heart surgery yesterday....a young 26 yr old woman with DS. So we will also be signing a big card for her and taking some group pics to share. My biggest fear is that the realtors will want to show our house this weekend....that would be a reallllll pain. the party sounds like it's going to be terrific! hope y'all have lots of fun! BTW - I don't know if the Sam's club cakes are similar to Costco (our warehouse store up here) but the Costco cakes are really unusually good -- especially for that price! I had a fiasco when I was making Matthew's cake for his christening and had to run out and get one as an emergency replacement (carrot cake w/ cannoli filling & cream cz frosting). That cake was awesome!! anyways - have lots of fun and let us know all the details once you recover! laurie

Best of luck on the party! Walmart has really pretty wrought iron tiki torch stands for $5.99. They are nice and heavy and frankly can't believe the price. They are in the garden section and new. So make the garden guy ask around before he tells you they don't carry them if you decide you need them. I am using large paper chinese umbrellas for a party this summer and the tiki stands are going to anchor them on the tables.
It sounds like a great party. Try to keep the dancing off the tables!!!!

well...LOL...picked up the cake...I had paid for extra flowers...BUT ....we had talked about Mexican Fiesta colors...I specified brite pastels ...as in Santa Fe Style Fiesta.....purples pinks tourquoise yellows....the colors I paint with....but evidentally all that got written down was Mexican Party...and....they just used the Cinquo de Mayo traditional colors of red and green....Hello....makes you want to sing Jingle Bells Emily!!!!....LOL. I of course complained and the decorator came over to me in a heavy hispanic accent he must really be from Mexico) and said those WERE Mexican party colors...oh well.....the girl said I only had to pay the 14.95 of their standard cakes...instead of the 26.95 they had jacked the price up to......let me tell you ....this one has about 10 lbs of flowers and extra icing...LOL...but we will dude it up a bit and it will be fine...Em is in the kitchen browning 10 lbs of burger meat which we will put in the fridge and reheat tomorrow.

HAPPY 2 week celebration BIRTHDAY EMILY!!!! ;D I DIG on those tostada shells my kids and I get em a couple times a month and make us some very nice looking dinners. Liv wants EVERYTHING in hers and Kyle just says meat and spicy salsa. sheesh.Great party food...JINGLE BELLS EM ENJOY!!!!

One bit of good news as we start the preparations this morning in earnest....Em said as she got up...."man...I am going to have to make this a NO CARB day because of the party"....it is so rewarding to hear her express that she comprehends the intent of her dieting....and last nite at dinner I was saying....how it was hard to smell that pizza at SAMs and pass it up...and then said..."I sort of miss pizza"....then Em piped up and said...."Well ...I ....dont miss ...anything!"....LOL...she is so pleased with her almost 30 lb now wt loss. Her motivation is keeping me motivated...well...now...off to start chopping for the Taco salads.....

Jackie, The party sounds like so much fun...and I love the menu...I'm a big fan of Mexican food, but dear hubby isn't, so I don't get it much. Its wonderful to hear how great Emily is doing on her diet. I truly admire her dedication...its no easy task, and not for the faint of heart! I'm still trying to lose. So kudos to Em and you both. When we did a pinata for Matthew's birthday, I snuck in and cut slits all through the under side and edges to "weaken" the frame. It worked!
The first time we did one, we had all the kids take a turn, then went and got a metal bat and let an adult beat it to death! We had powdered candy by the time it was over with. LOL

Party's over....and it WAS fun!!!! We had a nice evening for it altho it still ended up sort of beezy and cool....but didnt keep couples from "disappearing" in the dark...LOL...and now that they are all adults...I just let them go! My taco bowl shells that I had made were pretty big and the only mistake I really made was not filling them with lettuce myself first and just about ran out of hamburger meat. I seriously thought 10 lbs would be enough ....but several of the guys skipped the lettuce...and tried to fill their bowls with burger meat! I also supplimented the hors d ouerves with SAMs taquitos....and they ate all 72 before I even got the salads started.
The refried beans remained untouched and I threw away 5 cans worth at evenings end. The cake was pretty much gobbled up...I broke my diet and ate a bite of two (not a whole piece I promise) and must say.....buy your cakes at SAMs....half sheet for only 15.00. Very good and moist. I got a package of twisty spaghetti candles for it at Big Lots and they made quite a hit ....
All in all it was a very fun party and evening. Emily's latest admirer...brought her a gorgeous vase of roses...she was impressed!!!! After just cleaning out her bathroom of years of Bed and Bath unopened gifts...I was dismayed as she opened package after package of body creams and soaps and scents.....oh well. She also got money and gift cards...her favorites. Like I said I wanted to put...no gifts...but she wouldnt let me...and I must say all her friends had fun as she opened them too....Remember she is the only one of these 20 plus kids that has ever had a bday party with everyone invited....Its a nice bunch of people and its been fun to watch them grow up and mature. If you walked in...at first glance you would not think they were disabled really. There was lots of talk and many suggestions that Emily be sure and come home from Houston at Halloween for that infamous party. We shall see.
