Mexican, Middle Eastern, and Indian cuisines all use cumin seeds. It is balanced for ALL THREE DOSHAS, as per Ayurveda. It is meant to facilitate digestion and assist in eliminating toxins from the body. You can use cumin powder or whole cumin seeds, either raw or dry-roasted. When sautéed in ghee or oil, the dull brown hue of the ground raw material is enhanced. The color of powdered dry-roasted cumin is a deep brown. The aroma and taste of cumin are enhanced by both sautéing and roasting.
