The big evergreen nutmeg tree yields two spices: nutmeg spice and mace spice. The fruit's seed kernel is known as nutmeg, and the lacy layer (aril) that covers the kernel is known as mace. The tasty, speckled yellow fruit, roughly resembling a little peach in size and form, contains the nutmeg seed. When the fruit splits in half, the aril, the seed, is covered in a bright red substance that resembles a net. The nutmeg seed, which has an oval form, is found inside a dark, glossy pit beneath the aril. Typically, nutmegs are sold without their hard shell or mace.
