Are you keeping a log of her diet and activities prior to these episodes? It could be very helpful in finding triggers. You might want to write down the story of the day - everything that went on from waking up to the episode. It is possible that you will find common warning signs at least, and be able to get her into a safe environment before the meltdown, or even take action like putting on a weighted vest, or a white-noise machine, or something that might short-circuit the event. Take note on the frequency so that you'll know to be extra observant around the times that are most likely for recurrance.

Have you tried giving her flax oil? I mean lots of flax oil - 3 capsules 5 times a day? Has anyone suggested oil at all for this? It's wonderful for constipation because it softens the stool without causing pain. It doesn't give you gas or bloating. It's easy to take and is good for you too - Omega 3 fatty acid. Also, is she getting in whole grains - not wheat? All grains have both phytic acid and leptins that cause bloating, malabsorption, and inflamation in the gut. Take her off of all grains, including corn - especially whole grains since most of the antinutrients are in the bran. I can't even get jeans for me off the rack without having to hem them and take them in at the waist - an inch on the double on both sides, ugh! I'm considering making myself a pattern and making my own. I could even buy 3x jeans at the thrift store to use the fabric to save money - denim is so expensive.

That happened recently at our home - an upstairs toilet over-flowed and the one responsible just didn't realize (flush and run?), by the time we got the water off, there was water running down the a/c vent and into the basement, but no ceiling fell in - a few soggy seams, maybe. It would take some serious water in a short amount of time to make a load big enough to take down the ceiling, otherwise it would spread out and drip out the seams. It's odd.

I think it was ill-advised to have a tub without an overflow protector, especially with sn adults living there. I don't think you owe them anything for it - it was an accident after all. I would think that homeowner's insurance would cover most of it. I also think it's rude ahd disengenuous of them to text you from Em's phone as if she had sent the text. If they want help with the deductible, they should ask straight up. I'd say ignore it unless you think it will mess up relationships.
